Finger Lickin’ Good Energy Balls

There's nothing sexier than a man who can cook! Living in a particularly old-fashioned part of the world, I find myself extremely lucky to marry a virtuoso in this field and even though this may sound odd – everything I've learned in the kitchen, I've learned from him. Being a gifted man, he's also prone to improvise – which is commendable, no doubt. But it's a pain in the butt whenever I try to scribble down his recipes for the blog. That kinda happened here one evening while we were making dinner together. One minute I'm checking on the chicken in the oven, the next I see coconut flour, cinnamon and chocolate bark flying through the air!

Energy balls can be made any way you like, and any way you imagine – you can play with ingredients, ratios, make them juicy and caloric or full-on healthy. Best bit? They don't need to bake – just let them chill in the fridge for an hour or so. I've already posted a Quick No-Bake Chocolate Bites recipe here heavily featuring peanut butter, hazelnuts and dates. These are made with slightly different ingredients but are equally juicy And equally healthy. I'll be giving you approximate measures used but if you want them most moist, or more dry, or even take out and throw in something different – feel free to do so!

approx 200g Diet Plazma | 1 cup

approx 350g coconut flour | 1 ½ cup

3 scoops chocolate whey protein powder

approx ⅓ cup chopped almonds (unsalted)

approx 3 bars 80% cocoa dark chocolate

approx 1 teaspoon ground cinnamon

approx 2 tbsp ground flaxseed

approx 2 tbsp cacao powder

approx 1 tbsp raisins

approx 2 tbsp coconut oil

approx 100ml milk

natural rum essence

Diet Plazma is ground type of cookies, you could always use ground walnuts and/or hazelnuts. Coconut flour is light and fluffy, goes so well with whey protein powder. Ground flaxseed is awesome if you can find it – flaxseeds are also fine if you want some crunch. Cacao powder compliments the chocolate whey powder. Some raisins were added to the mix as they are gooey when you take a bite. Coconut oil ties everything together and makes it possible to roll up the balls between the palms. Natural rum essence isn't obligatory but it adds a lovely kick to the flavor alongside with raisins.

With milk, I wrote down approx 100ml but you add it to the mixture slowly, little by little, until you achieve desired consistency (not too runny, not too thick). Almonds should be chopped up – one part you could throw into the energy ball mixture and leave some to roll a few balls into. Same goes for cinnamon. You need dark chocolate to glaze the balls with – I've melted the chocolate in a bowl, set over a bowl with boiled water. I've also added some warm water to the melting chocolate, to loosen the thickness up and make it smooth. Some balls were rolled into coconut flour, others in chopped almonds, glazed with melted chocolate and sprinkled with cinnamon. I know you'll enjoy these gooey delish energy balls – and you might even lick down the plates (and fingers!).

  • cca 200g Diet Plazme, cca 350g kokosovog brasna, 3 mjerice whey proteina (ukus cokolade), cca ⅓ solje isjeckanih badema (nezasoljenih), cca 3 reda cokolade za kuhanje 80% kakaa, cca 1 kafena kasika mljevenog cimeta, cca 2 supene kasike mljevenog lana, cca 2 supene kasike kakaa u prahu, cca 1 supena kasika grozdjica, cca 2 supene kasike kokosovog ulja, cca 100ml mlijeka, rum aroma
Mljeveni lan je izvrstan, ako ga mozete pronaci toplo preporucujem – iako i obicni lan itekako moze posluziti (a i dobiti cete malo hrskave teksture).
