Protein-Packed Breakfast Burrito Worth Waking Up For

I'm sometimes the grumpy person who rolls her eyes at the mention of how breakfast is such a fun meal and how easy it is to make. Um, sometimes I'm so not in the mood to get creative with food and regardless how much I love food. This sounds crazy, I know – but I sometimes cannot be motivated to lift a finger, let alone rustle a meal. Think of days after night shifts, mornings when I'm sick or am having a terribly PMS-heavy hormonal meltdown. Can someone just feed me? And those are the times when I'm amazed at the creativity of my husband – he's able to make something lovely out of literally nothing. And this is how the Protein-Packed Breakfast Burrito Worth Waking Up For was born. If you're like him and are effortlessly creative – I admire you exceptional human being!

You have my easy protein pancake recipe (here) at the blog and now I'm showing you how versatile the Body & Fit Smart Protein Pancakes mix really is – yes, you can make pancakes with it but you can also make a juicy, spicy burrito! The great thing about this pancake mix (besides being really balanced, healthy and nutritious) is that it has a neutral taste – you can make it sweet or salty, depending on what you're craving – or in this case, what you currently have in your kitchen. This time we've added 1/3 of the 400g protein mix packaging (approx 130g), two cups of rice flour, 4 eggs, pinch of baking soda and a teaspoon of salt into the blender which made everything mix together. The consistency was nicely creamy and we made every ‘pancake’ aka homemade and improvised tortilla a bit thinner than we'd make regular pancakes so they're easy to roll up.

Next step? Throw everything you can find in your kitchen together and make it hot! Chicken fillets we had left from last night's dinner were fried and chopped into small pieces. Roasted red pepper and eggplant relish was used on top of our tortillas. Then we added chicken bites, roasted peppers, onions, salad and a mexican veggie blend (beans, corn, carrot, peas) from the freezer which we've de-freezed and fried with onions in a skillet. Then we added some herbs and chili flakes plus a dollop of Greek yogurt and pepper corns. It was yummy, extremely filling and it made me appreciate breakfast again.

Pravo sam cangrizalo i  nekada stvarno ne osjecam kreativnost kako struji kroz jagodice prstiju bez obzira koliko volim hranu (a jako je volim). Sta ciniti kada motivacije nedostaje i naprosto nemam snage za pomjeriti prstom, kamoli smisljati neki kreativan obrok? To bi u mom slucaju bila jutra nakon nocne smjene, jutra kada sam bolesna ili kada sam u groznoj PMS fazi i hormoni me bombarduju sa svih pozicija. Moze li me neko nahraniti? I upravo tokom tih kriticnih momenata sam neopisivo zahvalna na pomoci dragog koji je jedno od onih mitskih bica sa sposobnosti da od bukvalno nicega iz kuhinje naprave nesto vau. Bas tako je doslo do kreacije dorucka sa proteinskim buritom zbog kojeg vrijedi ustati iz kreveta. Da, naravno da su finalni proizvod palacinci ali mozete napraviti i zacinjeni, socni burito! Ono sto je sjajno kod ove mjesavine (osim sto je balansiranog sastava, zdrava je i hranljiva) – neutralnog je ukusa. Sa njom mozete praviti osnovu za slatka ali i slana jela, ovisno sto vam se jede ili u ovom slucaju – ovisno sto trenutno imate u kuhinji od sastojaka. Ovog puta smo u blender ubacili trecinu pakovanja (otprilike 130g proteinske mjesavine), dvije solje rizinog brasna iz dm-a, 4 jaja, prstohvat sode bikarbone i kafenu kasiku soli. Blender je sve lijepo sjedinio, dobili smo krasno kremasto tijesto koje smo za potrebe improviziranja tortilja razvukli u malo tanje ploske kako bi se tortilje mogle zarolati bez problema.
  • Naredni korak? Ubaciti u tortilju sve sto imate pri ruci i sve dobro zacinite! Od sinocnje vecere nam je ostalo pilecih fileta koje smo isprzili i isjeckali. Tortilju smo namazali ljutim ajvarom, preko poslozili komadice pilecih fileta, pecene paprike, crveni luk i meksicku mjesavinu povrca (kukuruz, mrkvica, grasak, grah) – nju smo naravno odmrznuli, skuhali i proprzili na luku. Potom smo dodali zacine, cili i kasiku grckog jogurta te sve zavrsili biberom u zrnu. Sve je skupa bilo strasno ukusno, uprkos potpunoj improvizaciji ukus je odgovarao uobicajenom ukusu burita. Cak me ovaj dorucak dosta dugo drzao sitom i moram priznati da mi je njime vracena vjera u dorucak.

      Pravo mocan dorucak, slazem se! 😀
      Preukusan je, nedavno uzeh mjesavinu za palacinke od heljde u dm-u pa cu pokusati nesto slicno napraviti. Apdejtujem na Instagramu kako prodje ta pustolovina 🙂
