Dark Chocolate Cream With Frozen Berries

I'm pretty much a dark chocolate junkie – I actually enjoy the taste very much! However, despite dark chocolate being very beneficial, as with most things in life the moderation is key. There is an overwhelming amount of evidence that cocoa can provide powerful health benefits, especially worth mentioning is its protective aid against cardiovascular disease.

But his doesn't mean we should eat lots of chocolate every day. It's still loaded with calories and easy to overeat on. You should have in mind that most of dark chocolate available isn't of finest quality. One should aim to find dark chocolate with 70% or higher cocoa content (that's the good stuff). Dark chocolates often contain some sugar, but the amounts are usually small. Rule of thumb – darker the chocolate, the less sugar it will contain.

Most of the time, I am fine with enjoying a square or two but sometimes I like to mix things up. This Dark Chocolate Cream With Frozen Berries dessert was a spontaneous one. I remembered that I once read water and chocolate don't mix and that it's one of those rules worth breaking. I've added 100ml of boiling water to 100g of dark chocolate (70% cocoa) which I've previous;y chopped. I've added a few drops of vanilla extract as well but that is optional. Whisking it all gently for 3-5 minutes, I got a melted and smooth mixture. If you want a thicker mixture, use more chocolate and if you desire a lighter one just add more water. 

In the meanwhile, prepare an ice bath in a large bowl using ice and a cold water. Quickly transfer your smaller bowl with melted chocolate mixture into the ice bath and whisk until the mixture begins to thicken up. Remove the bowl from the iced water bath as soon as the chocolate cream loses its sheen and continue whisking until the mixture becomes softly set. Layer frozen berries at the bottom of your bowl/ cup, pour chocolate cream over and garnish with some more frozen berries. You'll notice that the chocolate cream is thick enough for the berries to remain on its surface.

It's such a light and healthy dessert – you get the light bitterness of dark chocolate which was taken down a notch with water and frozen berries add crunch and a touch of sweetness. Delicious and refreshing!

  • Luda sam za tamnom cokoladom – cak sam velika ljubiteljica njenog ukusa! No, iako je tamna cokolada jako korisna, kao sa svim stvarima u zivotu znam da je umjerenost kljucna. Postoji ogromna kolicina dokaza koji upucuju na to koliko je u biti tamna cokolada zdrava, posebno vrijedi spomenuti njenu ulogu zastitnika kardiovaskularnog sistema.
  • Ipak, ovo nije zeleno svjetlo za neogranicenu konzumaciju tamne cokolade. Ona i dalje ima kalorijsku vrijednost i lako je pretjerati sa unosom u organizam. Treba imati na umu da je vecina onoga sto zovemo tamnom ili tzv.crnom cokoladom dosta loseg sastava. Najbolje bi bilo koristiti tamnu cokoladu sa minimalno 70% ili vise udjela kakaa no to sa sobom nosi i specifican gorki ukus, koji nije po svacijoj volji. Ali uopsteno pravilo bi bilo da sto vise kakaa tamna cokolada sadrzi, to se u njoj nalazi manje secera – i to je dobra stvar.
  • Vecinu vremena, sasvim mi je uredu odlomiti red jedne ovakve cokolade ali nekada uzivam i kada malo zakomplikujem stvari. Ovaj dezert sa smrznutim sumskim vocem i kremom od tamne cokolade je nastao spontano. Sjetila sam se kako sam negdje procitala da se voda i cokolada ne mijesaju – to je jedno od onih pravila koje treba krsiti. Tamnoj cokoladi od 100g (koju sam prethodno usitnila nozem) sam u posudu dodala 100ml prokljucale vode i dvije kapi ekstrakta vanilije. Vodu i cokoladu sam mijesalicom od miksera sjedinila dok se cokolada nije otopila. Nakon 3-5 minuta mijesanja sam dobila glatku smjesu. Ukoliko zelite da vasa smjesa bude gusca koristite vise cokolade a ako pak preferirate rijedju smjesu, dodajte vise vode.
  • U medjuvremenu sam pripremila hladnu kupku u vecoj posudi (hladna voda + kockice leda iz frizidera). Cim sam dobila cokoladnu smjesu (tj. otopila sam cokoladu), prebacujem tu posudu u hladnu kupku i nastavljam sa mijesanjem sve dok smjesa ne pocne da bude gusca uslijed hladjenja. Nakon par minuta mijesanja je cokoladna smjesa pocela gubiti na sjaju i potom sam je izvadila iz hladne kupke uz neprekidno mijesanje. Ubrzo je krema postala optimalne gustoce. U odabranu posudu/ casu sam dodala sloj smrznutog sumskog voca, potom sam kasikom prelila ga kremom od tamne cokolade i za kraj sam na povrsinu dodala jos bobicastog voca. Primjetiti cete da je cokoladna krema dovoljno gusta da voce ne propadne kroz nju.
  • Ovo je tako lagan i zdrav dezert – osjetite gorcinu kakaa koja je ipak ublazena udjelom vode a smrznuto voce pridodaje na teksturi i dasku slatkoce. Slasno, osvjezavajuce i jednostavno!

    Ove fotografije navode na greh 😀 Super ideja za desert, iako sebe vidim kako u jednoj ruci držim red čokolade, a u drugoj voće- mešajući to onako, vulgaris, u ustima haha 😀 Tamna čokolada je puna benefita po zdravlje, meni je najdraža poslastica u kombinaciji s bananom. Osetim naboj energije i lakoću u stomaku 🙂

      Vulgaris varijanta je i kod mene najcesca – a bome je i najprakticnija 😀
      Jao i ja volim da mijesam tamnu cokoladu sa bananom, neki dan sam uzela neku bas dobru (naravno da se ne sjecam kako se zvala) koja je imala tragove narandze ali nije bila kandirana narandza – vise je djelovalo da je utisnuta u teksturu cokolade. Koja je poezija bila kombinovati je uz banane!

      I think prepping in advance is a smart idea and I definitely recommend Maza and Theca.

      I am afraid that you can only find/ order their products via their Facebook pages.
      Perhaps you could get in touch earlier prior to your visit so that together you can organize delivery when you are in Sarajevo?

      I would also recommend checking out the organic shop in Sarajevo City Center (floor, next to drogerie markt and a pharmacy) and one smaller shop right at the tram station Katedrala (The Cathedral of Jesus' Sacred Heart).

    Odlično izgleda,a fotografije su zaista divne. Ja sam također ljubiteljka tamne čokolade,i ne smeta mi što je malo više gorka. 🙂 Najčešće pravim mus od nje,koji je odlična poslastica,a ljeti se može zalediti i jesti kao domaći sladoled 🙂 Svakako je zdraviji nego kupovni a uz to i jako ukusan 🙂 Lijep pozdrav za tebe,uživam u tvojim postovima :*
