Foodie Sunday: Blueberry Muffins with Streusel Topping

 

I’ve had lots of firsts here on MB since I’ve started this delicious foodie corner (and no, this was not reference to Mr.Fifty). I’ve been thinking what to make next and I had this amazing zucchini recipe I tried a few days ago. May I say that I’ve really surprised my hubby and he’s a notoriously great cook. I’ve managed to make better zucchini than him and he admitted it so, of course, those will end up on the blog eventually. I do have a strong sweet tooth and the sweetness prevailed this week. I have pending recipes for American pancakes and cheesecake but these babies shot all the way up to my priority list. Foodie Sunday: Blueberry Muffins with Streusel Topping – this post features my first ever muffins! I was so excited to make them and very unsure of how they’ll turn up but boy, were they good or what? This is how I made my yummy muffins.

Mnogo sam nekih stvari uradila po prvi put u kuhinji otkako sam pocela pisati za kulinarski kutak ovdje na MB blogu (i ne, koliko god bilo sumnjivo, ovo nije bila referenca za G.Pedeset nijansi). Razmisljala sam sto bih mogla napraviti slijedece i imala sam na umu fantastican recept sa tikvicama koji sam isprobala prije par dana. Moram se pohvaliti da sam impresionirala muza-puza koji je inace vrsni kuhar. Na neki neobjasniv nacin, tikvice sam pripremila i bolje od njega tako da ce itekako zavrsiti na blogu jednom. Posto imam jaku opsjednutost slatkisima, slatki dezert je ipak prevagnuo u ovosedmicnom izdanju. Zabiljezila sam da zelim napraviti americke palacinke i tortu sa sirom no ovi malisani su me osvojili na prvu. Kulinarska Nedelja: Mafini sa borovnicama i Streusel prelivom – ovaj post predstavlja prve mafine koje sam ikada napravila! To mi je bilo tako uzbudljivo i brinula sam se kako ce ispasti ali sada vam mogu reci da vise necu kupovati mafine vec cu ih od sada sama praviti. Na slijedeci nacin sam napravila sarmantne mafine.

 

 

First of all, I gather all my needed material. I used 120g of butter (room temperature), 160g of sugar, 2 whole eggs, 2 bananas (smashed into porridge), 200-250g of blueberries, 320g flour for cakes (T-400), 1 tsp of vanilla extract, 1 tbsp of baking powder, 1/2 tsp of baking soda, pinch of salt and 1 tsp of cinnamon powder (I used Ceylon cinnamon). That are all the ingredients you need for muffins. later on I’ll explain how I made the yummy Streusel topping which, from now on, will always be included in muffin recipes. Out of all these ingredients, you want to make two mixtures – liquid and dry one. To make the liquid mixture; liquify the room temperature butter. You don’t need strong heat and mixing does help to make this step finish faster. After you’ve melted you butter, in a separate bowl mix two whole eggs (yolks included) with 160g of sugar. Whisk them until they blend together. You also need to smash two bananas into a porridge and you can do that manually, I’ve used my mixer. Than you melted butter into the sugar and eggs mixture and add banana porridge with 1 tsp of vanilla extract. Use a fork to mix all those ingredients together.

Prije svega, uvijek na jedno mjesto sakupim sav potrebni materijal za recept. Koristila sam 120g putera (na sobnoj temperaturi), 160g secera, 2 cijela jaja, 2 banane (kasnije cemo od njih napraviti kasu), 200-250g borovnica, 320g ostrog brasna za kolace i pite (T-400), 1 kafena kasika ekstrakta vanilije, 1 kafena kasika praska za pecivo, 1/2 kafene kasike sode bikarbone, prstohvat soli i 1 kafena kasika cimeta u prahu (kupila sam cimet sa Cejlona u Badem Butiku). To su sastojci za mafine, kasnije cu pojasniti koji su nam dodatni sastojci potrebni za Streusel preliv te kako ga napraviti. Od svih navedenih sastojaka zelite napraviti dvije smjese – tecnu i suhu. Da bi napravili tecnu smjesu; otopite puter koji je vec omeksao na sobnoj temperaturi. Nije vam potrebna jaka vatra i mijesanje ubrzava proces topljenja putera. Nakon sto ste ga otopili, u odvojenoj posudi pomijesajte dva jaja (cijela, sa zumancima) sa 160g secera. Mijesajte ih dok se ne sjedine. Takodjer cete sa strane izgnjeciti dvije banane u kasu sto mozete uraditi rucno (prvo izrezete banane na kolutove koje potom zgnjecite viljuskom) ali to mozete uciniti i sa mikserom. Zatim dodajete otopljeni puter u mjesavinu jaja i secera te prelijete sa kasom od banane na koju dodate 1 kafenu kasiku ekstrakta vanilije. Viljuskom sve sastojke lijepo promijesate dok se ne sjedine (ili mikserom na kratko).

 

 

Next up is the dry mixture in a separate bowl; pour 320g of flour, 1 tsp of baking powder, 1/2 tsp of baking soda, 1 tsp of cinnamon and a pinch of salt. Roughly mix together. Than you add the blueberries and you want to blend them together with this powdery base we made so that they’re all rolled up in flour and other powders. When you’re done with the dry mixture, join it together with the liquid one and gently mix with a spoon. I’d advise a light hand so you don’t squish many blueberries. I prefer that some are squished as they give great coloring to the muffins inside but most of blueberries should be whole. You want the flour to be blended with the eggs and sugar so mix gently until you see no white flour while turning over your spoon. After my muffin blend is done, I whip out my mold tray and line all six places with paper muffin liners. Than I’ve simply filled them all almost to the top but it’s better to leave some space at the top. Before I’ve popped these to bake, I decided to make a Streusel Topping. It’s something I catched on while reading all those culinary articles. This streusel topping recipe can be used with homemade muffins, pies, coffee cakes and quick breads. Cinnamon streusel takes just seconds to mix up in a food processor, or you can just mix it up in a bowl using a fork. Then just sprinkle it over your muffins or pie right before baking. You need 1/2 cup of all-purpose flour, 1/4 cup brown sugar, 1/2 stick unsalted butter (room temperature) and 1/2 tsp of ground cinnamon.

Na redu je suha mjesavina; prebacite 320g ostrog brasna, 1 kafenu kasiku praska za pecivo, 1/2 kafene kasike sode bikarbone, 1 kafenu kasiku cimeta i prstohvat soli u posudu. Ugrubo promijesate. Potom dodate borovnice te ih pomijesate sa praskastom bazom sve dok borovnice ne budu obavijene brasnom i ostalim prahom. Kada je suha smjesa spremna, sjedinite je sa prethodno pripremljenom tecnom smjesom koju cete u nju da ulijete te njezno promijesate kasikom. Preporucila bih da te dvije smjese njezno sjedinite kako se borovnice ne bi zgnjecile. Dopada mi se da je par njih napuklo i pustilo sok koji dekorativno lijepo izgleda unutar mafina no – ne treba pretjerati. Vecina ih treba biti netaknuta. Suha smjesa treba da lijepo bude pomijesana sa jajima i ostalim sastojcima iz tecne smjese. Znati cete da je gotova kada vise ne vidite bijelo brasno cim predjete kasikom kroz smjesu. Pripremite kalup za mafine i oblozite posudice sa papirnim kosuljicama za mafine. Potom sam prelila kalupe sa smjesom, skoro pa do vrha no mislim da je bolje ostaviti malo prostora do ivica. Prije nego sam kalup stavila u rernu, odlucila sam da napravim Streusel preliv. Zapao mi je za oko dok sam prelistavala kulinarske clanke. Streusel preliv sa cimetom se moze koristiti pri dekoraciji domacih mafina, cajnih kolacica i domaceg hljeba. Za samo par sekundi mozete sastojke izmjesati u blenderu ili ih izmijesati viljuskom u posudi. Potrebno je 120g brasna, 60g (smedjeg) secera, cca 120g putera na sobnoj temperaturi te 1/2 kafene kasike cimeta.

 

I’ve mashed all these ingredients with a fork and additionally smoothed them out with a touch of mixer. I’ve sprinkled my muffin base with some of this topping just before I popped them into the oven to bake. You bake them at 170°C for 15-20 minutes. Baking time depends on the oven, I guess. I have a really old one and 18 minutes turned out to be perfect. The entire house was filled with their sweet scent and I’ve made a total of 10 muffins with my mold tray using these exact measures. Serve these beauties with a glass of milk and you have your own culinary heaven, right there. Muffins have a nice crunch at the top and they’re so soft and juicy inside – bananas contributed to this juicy aroma. Blueberries are exquisite in this muffin recipe and I think no one could fault these. I really hope you’ll try this muffin dessert and perhaps share your photos with me?

Streusel preliv nije preliv u tecnom smislu vec je poput mrvica. Te mrvice sam posula po povrsini smjese za mafine u kalupima tacno pred stavljanje kalupa u rernu. Mafine pecete na 170°C (rerna je prethodno zagrijana na toj temperaturi) nekih 15-20 minuta. Mislim da tacno vrijeme pecenja ovisi od rerne. Moja je neka stara tipa i vidjela sam da mi mafini budu idealno peceni za 18 minuta. Cijela kuca je zamirisala na ove slatkise tokom pecenja a posebno kada sam otvorila rernu – slasna aroma je zagolicala nosnice. Napravila sam ukupno 10 mafina sa kalupima koje imam pridrzavajuci se tacno ovih omjera. Servirala sam ih uz casu mlijeka i tako se dobro upotpunjuju – pravi su mali kulinarski raj za nepce. Mafini imaju lijepu koricu dok su tako mekani i socni iznutra – mislim da su banane zasluzne za mekocu i posebnu aromu. Borovnice su izvrsne u okviru ovog recepta te mislim da bi zadovoljile vecinu, ako ne vec sve ukuse. Stvarno se nadam da cete isprobati ovaj recept a ako budete – posaljite mi fotku!
