Lemon, Coconut & Cocoa Muffins

Muffin making is one of those calming rituals I resort to whenever I feel the workload is stressing me. I love calm evenings when the kitchen smells of cinnamon, vanilla and anise whilst we're both busy making food. I've heard that people who aren't brilliant cooks are good at making sweet desserts.

I guess that's true since hubby is an amazing cook but he is usually the one who preps bigger meals while I make sweets. This is one of my faves as it rounds up a good dinner but is also amazing as a standalone dessert - it tastes fab in the morning too, with a cup of coffee or tea.

Ingredients: 1 cup oats, 1 teaspoons baking powder, 3 tbsp peanut butter (smooth), 2 tbsp dmBIO coconut oil, 3 tbsp dmBIO agave syrup, ¾ cup dmBIO almond milk, juice of 1 large lemon, ½ cup coconut flour, ½ tbsp cacao powder, salt, cinnamon and vanilla extract to taste

Topping: chocolate crumbs, coconut flour, lemon juice

Preheat oven to 350 F/ 180°C and grease a muffin tin with some coconut oil. Break down the oats in a food processor and whisk in the coconut flour, cacao powder, baking powder, cinnamon and salt. Add the peanut butter, melted coconut oil, lemon juice, vanilla extract and mix.Then add almond milk and agave syrup and mix until just combined. Pour into muffin tins (about ¾ full) and bake for 10-12 minutes, until tops are golden brown. When done, drizzle some lemon juice and top with coconut flour and chocolate crumbs. So delicious!

  • Pravljenje mafina mi je jedan od najdražih opuštajućih rituala kojem pristupam čim osjetim da previše radim ili da me posao pomalo "uzeo k sebi". Volim mirne večeri kada naša mala kuhinja zamiriše po cimetu, vaniliji i anisu dok se nas dvoje gurkamo tražeći potrebne sastojke za jela koja pripremamo. Čula sam da osobe koje ne briljiraju u kuhanju nerijetko sebe pronađu u pripremi slatkiša i dezerta. 
  • Pretpostavljam da je to istina jer, iako je dragi uopšteno odličan kuhar slatkog i slanog, ipak je on taj koji najčešće priprema veća i zahtjevnija jela dok se ja posvećujem dezertima. Ovaj mi je jedan od najdražih kojim se volim zasladiti nakon dobre večere ali je i sam po sebi tako dobar a posebno dobro "leži" ujutro, uz šoljicu kafe ili čaja. 
  • Sastojci: cca 90g dmBio zobenih pahuljica, 1 kafena kašika praška za pecivo, 3 supene kašike glatkog kikiriki butera, 2 supene kašike dmBio kokosovog ulja, 3 supene kašike dmBio agava sirupa, cca 180ml dmBio bademovog mlijeka, sok 1 velikog limuna, cca 60g kokosovog brašna, ½ supene kašike kakaa u prahu, sol, cimet, i ekstrakt vanilije po ukusu
  • Dekoracija: čokoladne mrvice, kokosovo brašno, sok limuna
  • Zagrijati rernu na 180°C i podmazati kalup za mafine kokosovim uljem. Usitniti zobene pahuljice u blenderu, presuti u posudu i umiješati kokosovo brašno, kakao u prahu, prašak za pecivo, cimet i sol. Potom dodati kikiriki buter, otopljeno kokosovo ulje, sok limuna, ekstrakt vanilije. Na kraju dodati bademovo mlijeko i agava sirup te smjesu ujednačiti. Uliti u kalup za mafine (ne skroz do vrha, malo više od polovine) i peći 10-12 minuta, dok vrh mafina ne dobije zlatno-smeđu boju. Kada budu gotovi, preko njih iscijediti malo limunovog soka, posuti ih kokosovim brašnom i čokoladnim mrvicama. U slast!
