Delicious Banana Bread Muffins

I love making muffins - they are certainly one of my most favored desserts. What I really love about them is that you can so easily make them entirely out of healthy ingredients, without compromising fabulous taste. The person who triggered my muffin-making affinities was mu husband who is an amazing cook. Everything he makes is absolutely divine so when he asks me for feedback on a dish, I always mumble praise through many "mmmmhs" and "oooohs".

These muffins were a joint result - they're exceptionally simple, don't get me wrong, it's that this time we pushed and pulled on the choice of toppings. In the end, we both decorated the heck out of these beauties.

Ingredients: 2 cups dmBIO oats, 3 bananas,  2 eggs, ¾ cup dmBIO pitted whole dates, 1 tbsp cacao powder, 1 tbsp dmBIO almond butter, 1 teaspoon baking soda, 2 tbsp dmBIO coconut oil, pinch of salt, cinnamon and allspice, rum essence, 

Topping: chocolate chips, orange zest, coconut flour, dmBIO almond flakes

Preheat oven to 350 F/ 180°C and grease a muffin tin (I used coconut oil for greasin' things up). Mix all ingredients in a blender or food processor until smooth (it will work if you have a good, powerful blender). However, if your blender isn't as strong, you can soften dates for a few minutes in warm water before putting into blender.

Pour batter into muffin tin (with these measurements, I got 6 juicy muffins). Top with almond flakes, chocolate chips, orange zest, coconut flour if you want. We certainly have (ha!). Bake for 15-20 minutes or when a toothpick comes out clean from a muffin. Such a happy, healthy and wholesome snack/dessert that can be eaten at home or taken to work.

  • Volim praviti mafine i definitivno su mi jedni od najdražih načina na koje se volim zasladiti. Ono što mi je super kod njih jeste što se sa takvom lakoćom prave od zdravih sastojaka, bez kompromisa po fantastičan okus. Osoba koja me "pogurala" u smjeru redovnog pravljenja mafina i koja je potakla moju "mafinomaniju" je moj dragi muž. On je odličan u kuhanju i sve što napravi izaziva oduševljenje. Kada god me pita za mišljenje o nekom svom jelu, jedva uspijem promrmljati pohvale između mmmmh-ova i ooooh-ova od uživancije u dobrim okusima. 
  • Mafini o kojima vam danas pišem su rezultat zajedničkog rada - nemojte pogrešno shvatiti, i dalje su izuzetno jednostavni za pripremiti. Mi smo bili u nedoumici čime da ih dekorišemo. Na kraju smo ih oboje posuli svojim favoritima.
  • Sastojci: cca 180g dmBIO zobi, 3 banane,  2 cijela jaja, cca 130g dmBIO hurmi, 1 supena kašika kakaa u prahu, 1 supena kašika dmBIO bademovog butera, 1 kafena kašika sode bikarbone, 2 supene kašike dmBIO kokosovog ulja, prstohvat soli, cimeta i ako imate allspice jamajčanskog bibera u prahu, aroma ruma
  • Dekoracija: čokoladne mrvice, narandžina korica, kokosovo brašno, dmBIO bademi u ljuspicama,
  • Zagrijati rernu na 180°C i podmazati kalup za mafine (za podmazivanje sam koristila kokosovo ulje). Pomiješati sve sastojke u blenderu i pulsirati dok ne dobijete prilično glatku smjesu. Ako vam blender nema opasne mišiće, pomozite mu tako što ćete omekšati hurme na par minuta u toploj vodi prije nego ih ubacite u blender. 
  • Uspite smjesu u kalup za mafine (sa ovim mjerama sam dobila 6 sočnih mafina). Možete ih dekorisati i posuti čokoladnim mrvicama, bademovim ljuspicama, izrendanom narandžinom koricom ili kokosovim brašnom. Mi smo definitivno guštali i koristili sve četiri opcije. Ovo je tako veseo, zdrav i hranljiv dezert/snack kojeg je jednak užitak jesti doma ili ga ponijeti na posao.
