Foodie Sunday: Protein Muffins

Foodie Sunday is back with a healthy twist of an old favorite - Protein Muffins! I'm the first to drown myself in tons of saucey pasta, meatballs, galons of chocolate and too often a late cheesy snack but even I have a moment of reason slappin' me around to my senses. I'm not a believer of diets, I rather appreciate small tweaks that bring back balance in my choice of food. I've been throwing in more broccoli, cauliflower, rice, chicken, turkey, fish and fruits such as grapefruit, tangerine, banana to dilute all the pasta from my body. As much as I'm craving muffins, that greasy, heavy in sugar type of muffins - I have to say that I'm very happy with the protein-based version we're making lots in our household. And when protein powder comes in a yummy cookies & cream taste well, I don't object. 

Kulinarska nedelja se vraca i to u dosta zdravom izdanju starog favorita - rijec je o receptu za proteinske mafine! Priznajem, prva sam u redu koja ce se drage volje hedonisticki utapati u tonama paste i bolonjez sosa (ili cak cetiri sira), mesne cuftice mi nisu strane, cokolada je moj dobri stari prijatelj a ruku na srce - pocesto mi se javi zelja da prezalogajim bilo koju vrstu sira u kasne sate. Ali cak i duboko zagrizeni hedonista poput mene imam momente kada me zdrav razum isamara kako bih dosla sebi. Iskreno, ne vjerujem u neke striktne dijete vec radije pristupam blagim izmjenama u prehrani kojima cu vratiti balans. U posljednje vrijeme ubacujem brokulu, karfiol, rizu, piletinu, puretinu, ribu te voce poput grejpa, mandarina, banana kako bih razrijedila pastu koja mi tece venama. Volim i ajvar - ustvari, volim sve sto ima veze sa paprikom. Koliko god da mi ona slasna, masna verzija mafina sa (pre)vise secera mota po glavi moram priznati da sam dosta zadovoljna sa verzijom baziranom na proteinskom prasku. A kada taj proteinski prasak jos ima miris i okus keksa i kreme? Oh, da li uopste postoji ljepsa muzika za moje usi od toga?



I've used 2 egg whites and 1 whole egg, approx 50g of universal rice-based flour (gluten-free, wheat-free, lactose-free), approx 80g of cookie & cream flavored protein powder (Syntha-6 by BSN), approx 100ml of Greek yoghurt, a pinch of stevia sweetener, a pinch of cocoa powder and a pinch of cinnamon. This is the easiest muffin recipe there is - you just throw in all the ingredients in a blender and mix them together. Then you get a semi-thick-gooey texture which you then pour into silicone muffin moulds or classic muffin liners such as mine (placed in a tray previously). The only thing you need to do is to be careful not to fill the muffin liners to the top as it's best to leave some space for muffins to grow within the liners. Then I've popped them into my oven which I've pre-heated and let them sit there for approx 10 minutes. I've baked them for 15 minutes and they're not as gooey as I like them to be. Next time I'll reduce the baking time and perhaps throw in some fruit into the mix. I've made six muffins with the amounts used and they were absolutely delicious - they even smell amazing! Such a yummy yet healthy dessert that's done within minutes.

Za smjesu sam koristila dva bjelanjka i jedno cijelo jaje, cca 50g univerzalnog brasna na bazi rizinog brasna (ne sadrzi gluten, psenicu niti laktozu), cca 80g proteinskog praska sa okusom keksa i kreme (Syntha-6 od BSN-a), cca 100ml grckog Dukatos jogurta, prstohvat stevia zasladjivaca, prstohvat kakao praha i prstohvat cimeta u prahu. Ovo je najjednostavniji recept za mafine koji postoji - sve sastojke sam ubacila u blender koji ih je lijepo izmjesao i dobila sam polu-gustu smjesu. Nju mozete uliti bilo u silikonske kalupe ili u papirne koje sam ja koristila. Jedino na sto trebate obratiti paznju jeste da ne napunite kosarice do vrha vec da ostavite prostora kako bi mafini zadrzali oblik kada pocnu rasti. Ubacila sam kalup sa smjesom u rernu koju sam prethodno zagrijala i pekli su se cca 10 minuta. Licno sam ih ostavila nekih petnaestak minuta tako da nisu bili 'vlazni' koliko inace volim. Iduci put cu ih peci nekih 6-7 minuta i mozda dodati nesto voca. Kolicine sastojaka koje sam koristila su bile dovoljne za sest mafina koji su preukusni a i mirisu fantasticno. Proteinski mafini su slastan a zdrav dezert koji je gotov za cas posla - sta jos da pozelim?
