Foodie Sunday: Frozen Yogurt Banana Bites

9/14/2014

Here comes a ridiculously easy 'recipe' (it's not even a recipe!) for a quick & easy snack. Foodie Sunday: Frozen Yogurt Banana Bites includes only four ingredients; bananas, raspberries, Greek yogurt and sugar. This one I love to whip out whenever I have someone coming over and I really don't have the time to make my favorite Blueberry Muffins. If we exclude sugar and replace the raspberry & sugar mixture I use to get raspberry syrup with a healthier version (e.g.strawberry or raspberry-banana puree) - you get one of the healthiest snacks I know of. However, I am going through my 'sensitive' time of the month (wink, wink) and I was craving sweet, sugary treats to I went for the raspberry syrup version.

You just cut slices of two or three bananas – about 1 cm thick. I transferred them onto a plate where I covered them with Greek yogurt. After that I used a fork to transfer the banana slices onto a plate covered with baking paper. In a pan I threw in a handful of freshly washed raspberries and two table spoons of sugar. Then I heated the pan and mixed raspberries and sugar until they melted together, drained the syrup from all the seeds and let it cool down in the fridge. In the meanwhile, banana slices covered in Greek yogurt cooled down as well and I drizzled them with some of that raspberry syrup. Some additional time in the fridge is welcome but I was far too eager to munch away that I've simply added some fresh raspberries and cleaned the bowl entirely. Such a yummy, simple and cute snack. Ideal for lazy housewives such as the author.
